Tonight I am slowing down to appreciate the simple pleasures of life. After reconnecting with some friends from the past I invited my favourites of today to join me in an evening of inappropriate smoking, drinking wine and, 100% guaranteed, an amazing evening 🙂
The happy comes in waves – Perhaps I have too much time on my hands? I constantly worry about the dumb things in life. But for now, just the glass in my hand and the friends sat across the table dominate my mind and consume my energy.
I just got back from Worship practice and I’m beyond stoked for Sunday’s service. We’re singing one of my favourite worship songs ‘Relentless’ from Hillsong United’s most recent album Zion. Going back to singing was the best decision I ever made. I went through a weird time in my life where I just didn’t want to sing. Really since the day I graduated I haven’t indulged myself with music in the way I used to. And now I’m back. Man, it feels great!
I also made a pretty tasty meal for myself that I thought I’d share with you (not literally, although wouldn’t smelly-vision be the best thing.. imagine food network!)
It started with a little Renée’s Mediterranean Greek Vinegarette on some 50/50 salad – which is half spring mix and half spinach (gotta get dem irons.. *flex*)
Then I made Chicken meatballs (recipe as follows)
Chicken & Apple Meatballs
450g ground chicken
1/2 small red onion (diced small)
2/3 medium golden delicious apple (or whichever you like best)
2 tsp fresh / dry parsleysalt/pepper (to taste)
Mush (that’s right, folks… we’re getting technical) all the ingredients together, form the meatballs and cook in a frying pan on medium heat for about 15-20 mins, or until firm with clear juices running. Ét voila!

My friends and family know that I love to spend time getting messy in the kitchen. Many hours have been spent perfecting muffins & cupcakes (still a struggle), breads & pull-aparts, and, of course, savory dishes! I figured I may as well spread the love when it comes to recipes, what I’m working on currently, some of my successes (and major failures) when it comes to my work in the kitchen.
Last night I went to add to my frozen bananas when I realized that section of my freezer was full. Naturally, I decided to make a banana bread. Now, there’s a story to my favourite recipe for banana bread.. I keep finding a new one each time I make it – because I can’t for the life of me find the one that I used a few years ago when I first started baking. Every time I use a new recipe I forget to save it… -_- I know what you’re thinking.. But this time is different! I remembered to bookmark the page AND now I’m blogging about it. I couldn’t possibly forget this recipe, could I?
Best Banana Bread EVERRR.

The only change I made to this recipe is that I used 1/2 cup of vanilla yogurt instead of the sour cream because I didn’t have sour cream!

Apple Cinnamon Bread

I had to replace the apple sauce and canola oil with butter because I didn’t have apple sauce. After searching the internet for a few minutes trying to find a substitute for apple sauce I gave up and reverted to butter, which is what was probably replaced with apple sauce and canola oil in the first place.
Don’t they both look completely scrum-diddly-umptious?!?! Needless to say the diet will be slightly on the back-burner whilst this bread is consumed.. so, obviously, I’ll be back on track by… Thursday? Has anyone else been baking lately?
